Simba Beer, a craft beer maker, in collaboration with Rolling Mills Brewery, launched Los Pablos, a limited-edition Mexican-style lager, accompanied by a special event in Goa. The launch marked the debut of Simba Garage — an extension of Simba Brew Off, an innovative platform dedicated to fostering collaboration and experimentation within India’s craft beer community.

The Los Pablos Mexican Lager is a bold and flavorful brew. The collaboration highlights local brewing artistry, bringing together expertise and passion to craft a beer that is deeply rooted in the spirit of Goa.

The bottle design for Los Pablos is bold, vibrant, and full of character. Inspired by the high-energy world of Lucha Libre — the term for the style of professional wrestling originating in Mexico. It features masked wrestler graphics in a retro color palette, aiming to evoke a sense of excitement and rebellion. The design captures the fusion of craft brewing and Mexican influences, making it a standout addition to any craft beer lineup.

According to Ishwaraj Bhatia, the COO and co-founder of Simba Beer, Los Pablos Mexican Lager features a carefully curated blend of water, malted barley, flaked corn, hops, and yeast, enhanced with natural CO₂ for a crisp finish.

This light Mexican-style lager offers a delicate balance of bright tropical fruit notes and a subtle hint of corn tortillas. The flaked corn imparts a smooth, slightly sweet undertone, while the hops add a gentle bitterness, making it an exceptionally easy drinking beer with a clean, crisp finish. Designed for laid-back sipping, this lager embodies the spirit of Goa.

“The Simba Garage Los Pablos Mexican Lager was an initiative dedicated to collaborative craft brewing, spotlighting independent breweries across India to push the boundaries of flavor and innovation. A playground for experimental, small-batch brews. Inspired by Goa’s laid-back charm and thriving beer culture, we set out to create a brew that embodies the essence of easy-drinking yet flavorful craft beer,” Bhatia said.

He adds, “This Mexican-style lager reflects Goa’s coastal lifestyle, incorporating tropical fruit notes and a crisp, refreshing profile that complements sunny beach days and vibrant nights, Simba Garage Los Pablos Mexican Lager is a limited-edition release, available exclusively in Goa. With only 1,500 cases produced.”

Los Pablos is the winning creation from the Simba Brew Off, where several among India’s top microbreweries participated to create an exceptional brew. Held at Woodside Inn in Mumbai last year, the competition saw some of the country’s most talented brewers, each presenting up to two of their finest beers to a panel of expert judges. Evaluated on taste, aroma, appearance, and overall brewing excellence, the winning beer, Los Pablos by Rolling Mills Brewery in Mumbai, earned the first prize, a collaborative small-batch release with Simba.
