India’s food processing industry is on the cusp of a major transformation, fueled by shifting consumer habits, growing premiumisation, fast-expanding digital retail, and rising demand for value-added products. That’s the central finding of a new joint report from Deloitte India and FICCI, titled “STEP UP: Scalable Transformation for Efficiency and Profitability to Unleash Progress,” unveiled at the 17th edition of FICCI FoodWorld India 2026.

The report, seen by IndiFoodBev, projects that the sector could unlock nearly US$600 billion in value by 2030, driven by a broader shift away from a volume-first, supply-led model toward one centered on consumer preferences and value addition.

Consumers spending more

According to the findings, rising incomes, urbanization and digital access are producing a more discerning Indian consumer, one who wants quality, convenience, health benefits and a better overall experience from food products. This is fueling what the report calls “split-basket” spending, where shoppers mix budget-friendly staples with premium, health-forward purchases. Nutrition and functional food categories are reportedly growing at twice the pace of the overall food market, a trend the report says calls for clearer regulatory guidance on what health and nutrition claims companies can legally make.

qCommerce reshapes retail

Online retail is expected to account for 25-30% of food sales in India’s largest cities by 2030, with quick commerce singled out as a major driver of product discovery and premium purchases. The report notes that traditional trade will likely remain the backbone of nationwide distribution, while modern trade continues to serve as more of an experiential channel. Manufacturers, it suggests, will need distinct strategies, product portfolios and packaging suited to each channel.

Digital platforms are also changing how new products come to market. Up to 70% of new food launches are now “digital-first,” with a majority of new products debuting on e-commerce and quick-commerce platforms before reaching general or modern trade. Much of this innovation, the report says, centers on reformulating existing products rather than launching entirely new ones — while preserving taste and quality.

AI growth lever

Technology adoption is accelerating sharply across the sector. The report finds that 84% of Indian CEOs are increasing or redirecting capital toward generative AI investments, with AI-driven tools cutting the time needed to move from trend identification to product concept by roughly 30-60%. Applications span demand forecasting, manufacturing consistency, and more personalized marketing to consumers. The report points to government programs such as the Pradhan Mantri Formalisation of Micro Food Processing Enterprises (PM-FME) as a potential accelerant for AI, IoT and automation adoption across the industry.

Exports a missed opportunity

Despite exceeding US$50 billion in total food exports, processed foods account for only about 20% of India’s export basket — a gap the report frames as a major growth opportunity. Processed food exports have grown 10% year-on-year, led by categories such as processed fruits and vegetables, cereal preparations, and dairy and poultry products. The report suggests India can capture more of this opportunity by tapping diaspora demand, promoting Indian-origin foods internationally, and leveraging domestic manufacturing strength to serve global markets.

Regulatory reforms

The report credits recent regulatory reforms with improving efficiency and business predictability, while calling for continued simplification and clearer implementation guidelines to reduce compliance uncertainty.

Speaking at the launch, Anand Ramanathan, partner and consumer industry leader at Deloitte South Asia, described the sector as being at an inflection point shaped by technology, e-commerce and evolving consumption patterns.

FICCI director general Jyoti Vij echoed that view, saying: “India’s food processing sector is at an important inflexion point. Rising consumer aspirations, expanding digital adoption and increasing investments in value addition are reshaping the industry’s growth trajectory. The next phase of growth will depend on the sector’s ability to strengthen processing capabilities, accelerate innovation, enhance operational efficiency and build globally competitive value chains. Through this joint report, FICCI and Deloitte India aim to provide industry and policymakers with actionable insights to help unlock the immense opportunities ahead and reinforce India’s position as a leading food processing and export hub.”
